Sorry all... I am on the "WTF" route again. Can someone explain to me if it is possible to pour a good head but have bugger all bubbles after no many seconds later... Yes...I am a Newbie but...

Head retention is difficult due to the number of variables which affect it. The grist, the mash temp, the serving vessel (and cleanliness/residues) and carbonation level all affect it.

Carbonation itself is easy, and can be calculated with desired dissolved volumes of CO2.

You can certainly have a perfectly-carbonated beer with little to no head, or poor head retention.
