Simple question from a simple person. I have made a number of BIAB brews but one thing I am unsure of is after the boil and chill, when transferring the wort to the fermenter, do you leave the break material behind or add that to? I siphon from the boiler into the fermenter and tend to leave the break material behind but I am wasting to much liquor.

You would want to start syphoning the clear stuff then as you approach the end, when the break starts coming through, start filling sterile jars / bottles and let them settle out, then pour off the clear portion to add to the fermenter.

If you leave overnight in the jars for maximum settling, doesn't harm to pour the clear wort into a stockpot and give it a boil to be sure.

I use lab bottles, two good alternatives are glass Passata bottles or V8 juice bottles. Just sanitise and cling wrap overnight.

You always seem to lose a litre or more, but there are ways of retrieving the bulk of your wort.

The next day you will also have cold break in the jars, it looks like a jellyfish as opposed to the hot break that should settle out as a layer right at the bottom. In this picture the hot break is the stuff below the 100 mark, the jellyfish is ok to add.

Cold break good.

I wasn't whirl pooling but will give it a try. Also the secondary settling in jars.
I was relying on tilting the pot gently and getting as much out as I could.
Thanks heaps.

Was going to suggest put a brick under one side. Let it settle for a couple of minutes. Thats what I have done.
