I recently bought too much grain to make a yorkshire bitter. Below are my ingredients.
5.8kg MO
0.4kg crystal malt 60L
0.2kg torrified wheat
0.06kg chocolate malt

This will give me an expected OG of 1.064 for a 23l batch.

How should I fix my recipe so that I get an OG of approx 1.045.
I have a 30l fermenter and a 25l fermenter and am mashing in a grainfather.
Should I dilute my recipe and if so how much water should I add?

Cheers

All the grain has been combined in one bag and milled as well.

Give it a good mix and reduce the total to 3.8 kg?

Or brew it and enjoy it.

I think I will reduce the grain weight to 4.52kg and use the rest for an exctract brew or something.
Yes, you can partial mash that remaining MO, add it to a Cooper's kit and impress your non-craftbrew friends.
That balance of malt, yeast esters and hops of a good British bitter is far too important to dilute $#!t.

Can't you just add more water to the fermenter? I'm not sure how much though

If you top the fermenter up to 33L you will hit the right gravity. You won't have the same malt profile though and you'll need to add 50% more hops.
