Hi all,

My wife has given me a beer description [you can appreciate my descriptions of the Mash Paddle now]

It has to be Blonde in colour -- Bland [no roast or character] flavour
Smooth low hop bittering

Beautiful head retention

The description is very much a wheat beer but that is not what is required, it must be a traditional beer.

Oh and it can be either ale or lager.

Have a play and post some recipes. That way I can brew another beer next weekend.

Sounds like Empire to me Chiller...

If you have to drink it yourself though - a blonde lager with no hops sounds like a pretty boring exercise, so how about some sort of an albino mild ale? That way you can at least sneak some sort of malt and yeast character into it without offending the girls.

If you don't have to drink it yourself, buy a couple of slabs of Empire and fill your kegs one dark night. She'll be happy with the head retention (it has a half-life of about 114 years, but can be cleared faster if you have access to a stump-grinder).

Why don't you do a Kolsch - it is soft and smooth and SWMBO would like that.

I haven't used that yeast myself, but just read the description and it sounds pretty good.
May not quite match the Bland flavour you are looking for, but if you use enough spices it probably wouldn't matter.
If you are going the Radler path, from all my research it seems easier to just blend the beer to a lemon/lime cordial concentrate when kegging.

Wyeast 3522 is a good start. The great Belgian all-rounder. :beerbang:

How about Pale Malt, some Munich, pinch of CaraPils, 20 IBUs noble hops and some corriander. This also escapes the dreaded wheat. :D

Chick beer if ever I've heard it. :lol:

BTW Chiller... Did you ever to that Belgian Stout? :unsure:

Funny you should ask -- it is in the fermenter now. It is more a Belgian Porter but has a very nice taste out of the fermenter though.

Canadian Belgian was the yeast

i did a keg of f*&%ing aweful tequila(wtf?) and lemon
ladies LOVED it!
champagne yeast, artificial flavour and some residual sugar
sounds like a RTD to me :p

I think I'm more inclined to look closely at Sean's suggestion or Doc's Belgian

I did a golden ale today.
4.5kg ale malt (I used pilsner cos its all I had)
500g wheat
300g melanoidin (you can skip this for the ladies)
1275 thames valley yeast
about 30 IBU of NB for bittering, then casacade (for the ladies I'd use about 20-25 IBU of amarillo, but again, I couldnt find any).

Dunno about the yeast, pick one that has Kolsch listed in its styles :)

As for the recipe, Peter Winch/Geoff Viner got a 2nd in the AABC and I think Peter is a board member here, so if you are here Peter, can you post your recipe?

CAP - or substitute 20% of the base malt with flaked maize in any light lager...
