A mate gave me a Beersmith licence, been using it and have made a recipe i want to make tomorrow but i am confused.

Mash in says to add 17.73L of water in at 71.4°C but the step temperature says 66.7°C and i am seriously confused as to what it means. Does it mean to let the mash cool down to 66°?

Also, it also gives to different amounts of sugar to carbonate it with, Carbonation Est: Keg with 91.16 g Table Sugar and Carbonation (from Meas Vol): Keg with 74.85 g Table Sugar.

When you add the crushed grain to the 71.4 degrees water it should even out at your required mash temp RR. In the mash section you can specify the grain temp (dry) this will give a more accurate dough in temperature. As for the carbonation, I only use CO2. Given the comments by other forum members that add sugar to the keg, generally, approx 80 grams per keg is a good start point.
