Hey guys, i've got a backbone for an amber ale but i'd like to get some input on what hops people would use. I'd prefer to keep it to a single hop variety.

No experience with this style myself, but Category 10 in last years NHC (USA) was won by an American Amber (against 493 entries).

Hopping in 5 gallons was Horizon for bittering (33g 13%aa) at 60 minutes, Cascade (6%aa) and Centennial (9%aa) at 10 minutes (31g each), and again with the Cascade and Centennial in the same quantities at 0 minutes.

You could replace the Horizon with any other neutral low cohumulone bittering hop (Magnum would be a good substitute).
 
Minor hi jack - American Amber Ale is back on the menu for the QLD comps this year (and Nats????) - What dark malts? I have a shedload of Caraaroma and Simpsons Heritage Crystal.

However on rustling through the malt bin I've found about 300g of Amber Malt. Would this have a place, or would it lend a twang? It's powerful stuff.

My secret (shhh) ingredient in AAAs is a wee dram of Belgian Dark Candi Syrup... :)
 
I'm partial to a combo of amerillo and simcoe in an AAA.
 
any of the classic american hops will work well , in various combinations...
i like cascade and centennial in ambers and amarillo in pales

US05 does the job but pretty boring
