I have never understood why Coopers have not updated their instructions and push the high temp brewing?
Im giving Ijerry the benefit of the doubt - he is following the instructions on the can and in my experience you get crap beer 100% of the time.
IJerry -
1. Take off the heater - Yes, I know it states 21C to 27C but that is wrong - as advised above get your temp closer to 18C and then try and keep it steady - as steady as possible.
2. Next brew - if using a Coopers can - check the used by date and get as fresh a can as possible. Most homebrew stores are like supermarkets - that pack the new stuff at the back and the old at the front.
3. Don't use sugar. If you're using Coopers - at least use their Beer enhancer 1 or 2 as a bare minimum.
3. Start reading about adding hops and Crystal grains.
4. By some better Yeast and create a yeast starter
5. Good luck
