With apologies to Brewboard (http://www.brewboard.com/index.php?showtopic=74723)

If you had to choose only 4 yeasts for the rest of your brewing, ever, which would they be? I'm going for

WY2565 Kolsch (no WL equivalent)
WLP530/WY3787 Westmalle
WLP850/WY2042 Carlsberg
WY1728/WLP028 Scottish/Edinburgh

Very hard to set in stone but if my hand were forced it would be these (Note there were a couple that narrowly missed out);

Wyeast 1056 Amercian Ale
Wyeast 1187 Ringwood Ale
Wyeast 3522 Belgian Ardennes
Wyeast 2278 Czech Pils

Warren -

WY1084 Irish ale
WLP001 California Ale Yeast
WY2565 Klsch Yeast
2308 Munich Lager Yeast.

I guess I still think the same this week.

1. WLP023 Burton ale
2. Wyeast 1007 German
3. 1388 Belgian Strong (Duvel)
4. WLP565 Saison

Honourable mentions to US05.

US56
S-189 (for all lagers)
WLP013 London Ale
WY1388 Belgian Strong

I'd choose the following:

Wyeast 2206
Wyeast 1056
Wyeast 1338
Wyeast 1762

Wow, noone has mentioned 3068 yet.

Wyeast 3068 Weihenstephan Weizen
Wyeast 1056 American Ale
Wyeast 1318 London Ale III
Something Belgian, maybe 1388

US-56 (05)
Windsor
S-189 (Swiss Lager)
WY 3068

cheers Ross

A difficult one indeed.

WLP300 - Wheat Beers
WLP550 - All Belgians
WLP002 - Ales
WLP838 - Lagers

Doc

Can we also have some agar plates, stir plate and starter gear? It would be possible to experiment and isolate a few wild yeasts suitable for brewing.

Not to mention custom blends of the four.

1728 Scottish Ale - strong ales, stouts, porters, other ales
2112 Cali Lager - all ales and lagers
3068 Weihenstephan Wheat - there's no substitute for a good hefe
3787 Trappist High Grav - All Belgians. I was tempted to choose the Ardennes but I've never used it.
