3638 Temp Question

Hey guys,

Getting married on Saturday, so with the misses running around trying to sort stuff out, I've got Thursday and Friday just for brewing B)

Was going to put down Les's Schneider Weisse-style, however I have never made a wheat before?

I've got a pack of 3638 which I'm about to break up into vials and then get one onto my stir plate

What I want to know, is what type of temps are good for this style? 18? 23? Or does it require a ferment low then raise type of jobbie?

Any help is appreciated :)
 
I just made that same recipe yesterday. My first wheat, too. The wort tastes really nice. I was going to ferment at 20C, hoping it's enough to get the yeast doing a bit of funky business. I'm using 3068.
 
18-22c [will go to 24c] and give it plenty of head space in the fermenter, Wyeast say an extra 33% :unsure:.
