FG and OG of commercial brews

If the only commercial beer in your fridge is what others leave then I'd be inviting the guy who left the Hop Hog around more often.

    Not Again

Not sure this is correct. Excise is payable when the alcohol leaves the bonded store. If you have spoilage or spillage or other losses then this can be claimed back. As long as materials coming in is equivalent to alcohol leaving, including any losses, then all is fine. Any losses are a problem...

    Show Us Your Beer Engines

This is all good but you have not mentioned how you fill the headspace as you draw beer out of the keg. As vortex mentioned he would need an aspirator to allow co2 to enter the keg as beer is drawn from it. Otherwise a vacuum will form in the keg and you will not be able to pull more beer. If...

    liquid yeast favorites

Interesting that Wyeast is a lot more popular in your part of the world, is it more to do with availability. Here in the UK we can get both, quite often from the same supplier, and Whitelabs seems by far the more popular. I stock both Whitelabs and Wyeast. It seems to me that many brewers will...

Copper in HLT causing nasty flavours

StarSan is not a cleaner. PBW is not a sanitiser. Copper should not be a problem in your HLT. As Yob has suggested try an acid solution to clean. Then PBW before a thorough rinse.

STC-1000 wiring - check my work

The problem with looping using the devices screw terminals is that they are so small it is a pain to get two wires in there securely let alone the three you require for the neutral.

STC-1000 wiring - check my work

I will only say all your wiring appears to be correct. But, I cannot say by looking at a pic whether your plugs and sockets on the end of the cables are wired correctly or that all your connections are secure or if there is a chance a cable could be pulled loose from your enclosure.

I need 700g of Citra flowers or plugs

As per the link - they are 2010 crop same as Craftbrewer. I'm not aware of any more recent plugs coming into Australia and as previously mentioned you have next to no chance of getting flowers into the country legally. I also have a reasonable amount of 2012 pellets in stock. Nige

    spelt

I do have a small quantity of Weyermann Spelt Malt in stock. Not hard to source but not stored locally so was a matter of ordering and waiting for a container of other malt to come out of Germany. Definitely not cheap though. Weyermann site says it is high in enzymatic power so no problem...

Crystal malts - why so many numbers ?

The Crystal10, Crystal20 etc.. in Brewmate/Beersmith or other software are °Lovibond colours. These are roughly half the EBC colours you are getting from CB for your Bairds Crystals. If you don't want to add the actual the actual figures for the malts you have you could use the following. Pale...

I don't get it. Why is Ross wearing his monks costume from ANHC?

    Beersmith manual recipe entry

No need for multiple hop entries. Existing recipes keep the original AA unless you change it in the actual recipe.

    Awesome hop plants.

I have two Cluster plants in seperate pots which I believe came from the same mother plant. One is about 3m tall, regular sized leaf and a good number of cones. The other has failed to reach a metre, small leaves and no sign of flower or cones. I can put the difference down to the pot size and...

    Beersmith manual recipe entry

Always keep AA% of hops up to date. As Florian says, they can vary quite a lot and it really will make a much bigger difference than most of the grain values. For grain the important one to keep an eye on would be colour, if it is really important to you that you get an exactly colour, otherwise...

    Beersmith manual recipe entry

Generally change the existing entry whenever I get new stock of specialties. For base malts leave the default unless I notice large differences. As a retailer I make the information available for any customer that is interested as good retailers do.

    WLP004 Irish Ale yeast

WLP004 does, as you've noted, floc very well and "set like concrete" leaving very clear beer in quick time. As for the low attenuation I think you should be looking at things other than the yeast, recipe, mash temp, aeration etc..
