    Black pepper, coriander and ginger.

Fair call - but I'm pretty pleased with the result. Its quite a nice brew but if you wanted the extra bite flame out would be the go as you suggest.

A Guide to "Extract with Specialty Grain" Brewing

I agree with what you're saying here but theres always google. If you type what is IBU you'll have the answer in seconds. Sometimes peop,e retain knowledge better when they have to seek answers too right. Other than that you're right about keeping it simple for sure.

MY ORIGINAL ATTEMPT. THIS ACTUALLY TURNED OUT GOOD - SMOOTH WITH A VERY SUBTLE PEPPERY SPICE. Posted 18/11/18 Gday all, First go at an extract black pepper and coriander beer with some steeped crystal grains 10L. 25g saaz @ 15min 25g saaz @ 10min.....BUT THEN 25g of cracked coriander seeds...

    Black pepper, coriander and ginger.

Ha ha grrr! Like the espresso shots idea - came out a bit full on though ay? Nothing worse than an overpoweringly bitter beer. I did a similar thing with a coffee porter but just added 2 teaspoons of coffee to primary. Turned out ok, as in, its more subtle than id like but thats why we...

    Black pepper, coriander and ginger.

Actually this time I put an extra 5g of crushed black pepper corns in because, surprisingly, the last brew it was barely noticeable. Give it a run - I'd say if you didn't boil it for 5mins and the add to primary to allow it to ferment out and mellow you'd possibly be in trouble.

Put it on today - I'll let you know. The last one was pretty good but this time I've used T-58.

Hops in a boil at the start vs Hop tea after fermentation

Hi mate - I steep crystal grains for 30mins at 70c and then boil the resultant wort for another 30mins and do my hops editions into that (as opposed to boiling the LDME. By steeping a few hundred grams of specialty grains you add freshness and can alter the colour of your brew a bit as well -...

    IIPA kit experiment

Totally understand the being tight bit - I got i to home brewing to save money not spend more ha ha. Why a wheat kit? I've used the thomas coopers IPA kit with steeped crystal and a heap of low AA hops added as late editions (20 mins and less) and got pretty good results. I can't see what...

    My first extract brew

I'd certainly agree with this from ein stein. Steeps some specialty grains for a fresher flavour and if you're going to add so much dex (which I find kills head retention) add some carapils as well. Experiment and have fun!
