How Do You Finish A Session?

I'm coming to the end of a good night of a wide variety of beers with a good bunch of friends and it's time to plan the end. Normally I finish with something crisp and cleansing - recently it's been APA's - but a good crisp lager has been reliable in the past. Recently though, I've found a...

So What Else Do You Like To Drink?

Wine often, mostly big reds, but I'm always tempted to go back to beer to finish off and someone, somewhere told me that grain to grape is okay, but grape to grain is a problem. Frankly, I think my problem is the amount of grain and grape, not the order!!! Love a good single malt. Mostly the...

How Do You Drink Your Beer?

My beer is always served in my glass. An aging SA pint glass (15oz), holds one stubbie perfectly with a decent head. It hasn't seen detergent in years. It gets lovingly rinsed at the end of a session. Laces perfectly every time. And a tulipy stemmy type thing for more malty aromatics (Belgians...

    Home Made Smoked Malt

Don't be disheartened tony. One. You brew for yourself mainly. If you like it, that's good enough. If your mates like it, even better. Two. Beer judges have styles to judge by to try to keep a degree of objectivity. Some latitude is available with specialty beer classes etc., but you've...

    New Coopers Lagers

It might not be Coopers fault. I'm amazed at how disappointed I am with former favourite beers these days now I can make my beers as malty or as hoppy or as anything else I like to match my tastes. Bloody home brewing versatility!!! But I have to agree. Something a little more oldy worldy...

Rex, I think that link is to the photo gallery. There are upgrades underway at the moment which should restore the gallery. Plenty of pics should be available when it goes through. Luke.

    Commercial Breweries

Unfortunately even some of the smaller breweries use hop extract... James Squire for example... Mind you, it is owned by Lion Nathan. Moral... You can only trust your own ingredients. Home brew is king.

Have You Made A Coopers Stout

I would expect final gravity at around 1014 with 19.5 litres, so don't be concerned if it doesn't get down to the 1008 you're expecting. As far as I can work out, the Coopers BE2 is 375g dry malt, 375g dextrose and 250g corn syrup. The corn syrup is not fermentable and will add to the body a...

    Unmalted Wheat

I've read a recipe calling for a small amount (500g) of unmalted wheat. I was under the impression that grains like barley and wheat where fermentable only after malting. Is this the case? What effect does unmalted wheat have and how does it differ from malted wheat?

    Home Made Invert Sugar

I've read a bit further on this and I've now seen advice which recommends neutralising the acid with chalk or similar before adding to the brew. I've only seen this recommendation once in all I've read on invert sugars, so it doesn't seem to be a big issue. I probably won't bother. Any thoughts...

Have You Made A Coopers Stout

I made a good simple stout with this kit, 1.5kg can of Coopers Dark malt, and recultured Coopers Stout yeast. Very good, and big enough for 23l.

    How Crucial Is Fg?

First time around it was hard to tell the difference between my brew and the real thing. Mine was actually a bit drier. The real thing had a noticeable sweetness when tasted side by side. This time I've added 250g liquid malt to give it a bit more maltiness. It still won't be as sweet as the...
