    I would use US-05 for sure :) Then just the can of Real Ale and BE2. Add hops at different stages (some at the start and then dry hop at the end). Reckon I'll read that thread now

    I was actually just going to use one kit, maybe boil 30-40g of cascade to start, pop it in the FV with the kit etc, then maybe dry hop with some Topaz. Pretty new to the game :)

    Actually upped the ante and went all fridge from FB marketplace :) I have some aluminium tubing to make a false floor but seems to be cool for now - That and the temp control :)

    Coopers Real Ale & Cascade / Topaz

    So I have a couple of Coopers Real Ale kits, 250g of Cascade and 120g of Topaz. My last experiment was to boil 40g of of Mosaic for 5 minutes and tip the whole thing in the fermenter with a Coopers Australian Pale Ale so pretty comfortable with that. So what do you think?

    All done and been bottle conditioning for 2 weeks. I've had a couple of cheeky tastes and it has come along really well. Can tell it needs to sit for a while so going to leave this one for a bit but pretty happy :)

    Quick update :) Fri 26/09 - OG 1040 Tue 06/10 - SG 1010 Have a public holiday on Friday 9th (Ballarat Show Day) so will take another reading tomorrow and one on Friday. If all the same I figure I will move on to bottling on Friday. Had a taste and it was not terrible which I was happy about...

    Bit annoyed at myself :( Last night the house was pretty warm and fermenter was sitting nicely at 20 degrees so I figured I could leave it without the heat mat. Woke up and 7am was down to 16 degrees - but not sure how accurate as the stick on thermometer only has 2 degree increments. Today...

    Oh thanks mate. Would I be right to just pop a couple of bits of timber on the pad then the fermenter on top creating an air gap?
