    seriously don't worry too much about the yeast just add **** loads of hops and you can't go wrong in an IPA :)

    The 30 watt bulb has done the trick for me. It heated a glass of water from 17 to 19 pretty quickly. I never bothered to wire the heat side of my stc1000 so I have dusted off my old Mashmaster Tempmate to control the light bulb while the STC controls the fridge.

    so I am looking at a heating solution up here in QLD because I want to ferment at 19 degrees and from experience the fridge will drop to 15-16 in the current ambient climate.     never seen that before. Although it's not a very good photo. can you take some out and put it in a glass and take another photo? Looks like someone gave you unmalted wheat instead of ale malt?! It doesn't seem to have any amber/gold colour to it at all.

    where are you getting the hops from? That recipe should be getting a very similar aroma to stone and wood pacific ale. if the hops are old or stored poorly it can impact the aroma. New season is due pretty soon I think. also I find adding the hops at fermentation temperature gives the best...

    That's cool that you've got 10L to play around with after brew. It's always a bit of hand break for crazy ideas when you realise you'll have to drink 20 litres of this stuff! My first ever kit brew was a brewcraft lager, which included a drying enzyme!

    you'll still need to make a starter I'd say. depends on your OG. use mr malty yeast pitching calculator http://www.mrmalty.com/calc/calc.html that's a lot of lager for your first one. You don't do things by halves do you! Be warned lagers can be hard. good luck!

    That recipe above, the ipa, came out to check it just now and it's gone off with yeast spewing out the airlock. Never seen us05 do that before. Set at 18 degrees too. Maybe pitched too much slurry
