    Bread Porn

New to bread-making...but have been baking a "no knead" loaf a few times a month the past few months. Been very surprised how easy it is and how well the bread turns out. Great crust and nice a chewy inside. been using cheap Aldi flour, a bit of salt and 1/4 teaspoon of yeast.

    Brew Day @ Schwartz's Brewery

Black Labb - great post. Thanks for taking the time to do this. Very jealous as well. I toured Schwartz a few years ago when Sam Fuss was head brewer. She was fermenting a Pale Ale that was being dry hopped with heaps of cascade cones. She let me get up on the ladder and give all those lovely...

Getting More Maltiness In My Amber Ales

I remember reading articles in both BYOB and the old Brewing Techniques about brewers looking to up the "maltyness" of their beers and purposely dropping the efficiency of their mash to achieve a noticeable effect. If you have the room, (or do a smaller batch) try a no sparge mash at a lower...

    Slab Round 3

Cam We had SLAB Round 8 yesterday at Heathcote. Great arvo of beers and beer talk. We've been a bit slack updating the AHB page as most communication is now via the SLAB face book page. There is a thread in here pointing you in the right direction to the Face Book page. Join that and you will...

    Fermeniting Smaller Volume

I like that word Fermeniting !! Sort of a cross between Fermenting and Vomiting. Maybe thats what happens when you get an over vigorous ferment. When your wife yells at you, "what the hell is that?" you calmly reply "I'm Fermeniting" as if its a normal part of everyday brewing.. :P

Larger Brewing In The Garage, Unstable Temps.

Putting fermenter in an old fridge (non working) works well. Buffers inside from outside temp swings. Keep an eye on temp and if its getting too low wack a bottle or two of hot water in to bring up a bit.

How To Drive My Grain Mill, Recomendations Anyone?

Bruce It aint the fastest grind. Runs about 80 rpm. Never really timed it but from memory it takes about 10min to do about 5kg. This isn't too much of a drama as I fill up the hopper and start the grind then go and get other stuff ready. I think I read soemwhere that a slow grind can be an...
