    Don't worry about it, as long as the culture has enough live yeast for your wort volume, the yeast will outcompete anything that may have got in, and fermenting at lager temps you have even less to worry about...

    I have done a few high adjunct brews but not for the reason of lowering gluten levels in the beer. I can get away alright with having a beer every now and then, but dont drink enough to warrant brewing anymore.

    I didn't get a chance to meet everyone. I do remember the glasses being broken but I was busy protecting my custom made gluten free pizza that they so kindly baked for me! As for the beer, the steam beer was my fav as well. The IPA was nice and I agree Hightail is better without the hop flower...

    After trying FWH years back, I never did a beer after without it. As for mash hopping, you WILL get bitterness from the hops, not only will some isomerisation happen in the mash, but some of the resin will run off with the wort and this will continue in the boil. I do not know how much...

    If you allow it to sour spontaniously you are likely to get a lacto infection rather than brett. This will give you a similar result, but less desirable IMHO. You can buy various strains of brett, but it is a fair outlay just to make a small batch of psudo Guinness!

    Even a city slicker has a better chance of getting good quality malt if they plant a certified variety. These varieties were selected for many reasons, some benefit the farmer, but I agree the maltsters are damn fussy! Have a look here if you want more info...

    If you want to sell the barley as anything but feed grain, it very much DOES matter what seed you plant! If the variety you plant is not certified, you will be hard pressed to find a maltster willing to buy it, even if it is the best crop ever grown ;)
