Regarding cold side oxidation, how long a beer can stay on yeast, and other questions

That will vary on the yeasts health, reserves and temperature. Cold temps put yeast to sleep, but their activity does not stop completely, and they eventually excrete unwanted's into your beer. Autolysis the name for this event, do some more research online to find out more.

    All grain over carbonation

If you are bottling, it's one of the golden rules to make sure your beer has finished before bottling, and F.G. is with a couple of points of the expected gravity. Kegs, not so much, as there is a valve you can bleed off pressure, bottles not so. As a side note, I've heard after a while plastic...

Regarding cold side oxidation, how long a beer can stay on yeast, and other questions

I wouldn't worry about a bit of O2 getting in. CO2 is substantially heavier than O2 (and every other gas that i'm aware of) so you'll have a protective CO2 blanket keeping everything else at bay. For a lager, 4 weeks would be the absolute tops to leave the beer on the cake, that's according to...

@Dutto You don't mention F.G.?? Did you bottle too soon before reaching terminal gravity??

Danstar Diamond Lager Yeast in 11g Sachets

Went via the brew shop on the way home to get some more yeast. I get home and low and behold it's blow off tube is going pretty hard. Not a fan of these slow starts. I checked the exp date on the original packs and the ones I bought today from a different brew shop, same batch and date as each...

Danstar Diamond Lager Yeast in 11g Sachets

Pitch dry, you don't rehydrate?? One thing that comes to mind, I could not see a Mfg or best before date on the dry packs which I thought was a bit unusual. The dry yeast was a lot darker than i expected, probably 2-3 times as dark as US-05, and this darkness came through in the cultivated...

Danstar Diamond Lager Yeast in 11g Sachets

Couldn't find a newer/more appropriate thread, so this will do. I've decided to a brew some Helles batches and decided on Lallemand Diamond, as I have never used it. My first brew was ~40L and I decided to do a 2 stage 1.040 stir plate starter of for a final cell count ~1.75M cells/L/deg plato...

    A pot with no holes?

I'm after a high temp self priming pump for a Hermes system. I can't find an inexpensive one. Have you got a link to one?? The link from @TowelBoy2013 does not specify at temp rating, so most likely not >60deg C rated

Can you use this as a no rinse sanitize soulution?

Sodium Percarbonate is a cleaning product, not a sanitizing product. In other words it will get your gear clean, but microbes can still be living there. Get some StarSan. It's dirt cheap and goes a long way.

Using plastic wrap to seal fermentor

If Ambo's use plastic wrap on open wounds to stop infection before they can get the patient to hospital, i reckon it'll be ok for a lid on your fermenter. P.S. do some home work on open fermentation including cool ships and Yorkshire Squares. It might open a few ideas and attitudes up.

How long can a batch sit in a primary fermenter for

Back in my kit and kilo days i had to leave a Coopers ??? on the cake for 4-5 weeks. Yeast used was the Coopers sachet. It's the only beer i've made i couldn't drink and had to throw out. To answer the OP it would come down to ferm temp and type of yeast used. Personally, I would not go longer...

    Stone And Wood Ale Recipe

If you've got around 40% wheat in your grain bill you won't need Oats for head retention. Try increasing your Mash temp, I've only brewed this once myself, but 66C is about where you need it. Oats will provide a silkiness, but that's not stated on S&W's website as an ingredient. I dry hop in a...

    Wort Chiller Just Ain't Chillin

Is it a counterflow or straight immersion?? Its all about flow rate. Too fast and the cooling water wont be in contact with the hot stuff for long enough to absorb the heat. Stainless is great for cleanliness but not the worlds greatest heat conductor. Copper is better for heat transfer. Slow...

Gas leak and kegging help needed

I've also got a mix of CMB, Cornelius and some old Stainless disconnects. I have had two of the plastic ones split on me overnight and waste 3/4 of a keg. What a mess!!! Give the cheap crap the flick. Look up Andale Beverage systems in your state, they are the Cornelius agents for Aust and...

Wanted - AG Brewing Equipment in Brisbane?

Hi Guys, I have a mate that used a rectangular esky as Mash tun. made the false bottom, fly sparge arrangement etc. First brew all went well until time to remove the false floor. OOPS the sides had come in with the mash heat, and stayed there. Rule 1. Use quality gear, even if it's 2nd hand...
