dont want to take away from your good work there moray but always been a wee bit mystified why brewers pull their kegs apart, afterall they are normally topped with gas and their cold, hardly a place for contamination. My cleaning of kegs is let it sit under gas until I am close in need to reuse...

used dex, ldme, sugar, coopers lollies, wort and jelly beans over the years. The amount is so small it makes no difference to taste, only the time frame for carbonation. I prefer not to use the malt extract only for the reason it leaves a dirty krausen ring up on the neck of the bottle.

Its ok to pitch the cold yeast to the warm wort, Ive heard the other way around isnt the ideal way. Why not pour off a couple litres of your wort and pitch your yeast to that, by the morning you should a have healthy active starter to throw at the cube.

Ok Rook but nothing better than whats on the Wyeast/Whitelabs fixture. I had a couple, the Burton was a a real sleeper the lager one I bought didnt excite me with attentuation, the beers were ok nonetheless. I`ll stick with the readily available models.

Bribie, does the base malt dictate the conversion of adjuncts? If adding adjuncts to a mash whats the easy peasy that conversion has taken place? Nothing smarty in the question but I have problems with a high adjunct mash, where it just stops after a very vigourous fermentation......dead only 8...
