    I made a raspberry wheat beer some time back, it was so dry it could have been a sparkling wine.....it was interesting but not that enjoyable.

    Yep, temp control. Pitch at around 18 then slowly take the temp down to 10-12 deg C in Inkbird controlled fridge. Isoamyl Acetate could be it - the aroma/flavour can happen very quickly when it does - within a couple of days.

    Pretty bog ordinary - Grainfather with 5kg Pils, 300g of carapils. Magnum at 60 min Saaz at 10 min. Saflager yeast after oxygen Usually this fault appears if there is a slow start with the yeast.

    What a fantastic reply......thank you. Clearly we are in very different paddocks when you lend your knowledge, I will need to re- read this a few times to understand some of the technical aspects !! I have always used JW malts, both pilsener and pale. I wonder sometimes what role yeast may play...

    I ask the question even though the answer would seem simple..... Are there any chemical assumptions to make when inputting rain water into some of the brewing water calculators for brewing. For me it would be inland rain onto a Colourbond roof then into a Poly tank. Thanks, Bruce

    Hi huez, I have had a look at Ez water, that might be a better place for me to start than Bru'n Water ( brain might explode) . If you use a water filter, what would you reset your water chemistry to? It's only been the dark beers that have been affected of late - my English Bitters are coming...
