Frequently Asked Questions For The New Brewer

Hi all, Although I've been K&K brewing on/off for 20+ years I still sometimes fall into some basic traps when returning after an extended hiatus. Here's some tips of mine to assist with easier brewing/avoiding mistakes, I hope you find these of use: - If using a fridge for brewing +...

    Bottle washing idea

Hmmm I like the sound of giving the bottles an overnight soak! I never had that option at my old house so never gave it a thought. I have approx 350 longnecks, most of which need a full nuking. I'm happy to just do ~30 at a time the night prior to bottling. Rinsing/sanitising one-at-a-time...

    Bottle washing idea

Thanks all for your replies, Grmblz yes I wasn't sure on whether a HWS recirc pump would be suitable for this kind of loop; their ability to handle hot water was what caught my eye, all other cheap pumps I'd seen can't handle anything above ~40*C. All of the bottle-washing setups I've seen...

    Bottle washing idea

Hello all, Long time between forum visits. I'm after some opinions please from others who use bottles. I'm sticking with bottling as I enjoy the process. I'm in the process of setting up a new brew station after a hiatus of a few years, and have come up with an idea for improved bottle...

    CY17 Cider

Late reply - I've just used a packet of CY17 in a cider using a variety of apples from the in-laws' (20L) + 500g lactose. It'll probably turn out tart because some of the apples were a bit green, but all were edible. OG: 1052, yeast added at 23*C, fridge set to 23.5*C.

Apple Cider using fresh juice as base

Brewing with the fruit alone will be enough for a full strength cider. I added a kilo of dex to ~20L of cider and ended up with a 10% monster. I went through two full eskies' worth of apples (~360 midsize pink ladies) to get 20L of juice via a much-punished juicer, although I could have always...

Soda Stream sugarfree Pink Grapefruit experiment

Update for the Sodastream brew (2.5wks in): Aside from some indication of +ve pressure, there was no airlock activity throughout the brew period. The fermenter I've been using has been in some HOT water before so perhaps the lid seal isn't 100% anymore. Will bottle today. I tossed in the 2nd...

Soda Stream sugarfree Pink Grapefruit experiment

Hi all, I picked up a couple of Soda Stream bottles for $2 each (Best Before last week), & had a spare kilo of dex & figured "let's see what this turns in to". I'll try it out with some SN9 yeast (1 to use, 1 spare). I'm aiming for a hobo sweet alcopop result, because why not. The sweeteners...

Recipe ideas for Coopers Dark Ale

I did a straightforward Coopers Dark Ale + 1kg BE2, no hops or other additions. It was ok, your typical "Coopers taste" given the quantity of dex in the BE2 & the standard yeast. I think you're on the money with using a kilo of LME/DME with a can of Dark Ale. Maybe start with that as a...

Toucan Kona Stout + ginger beer

Hmm... I'm not sure on the ginger beer, after opening the first bottle tonight. It's only slightly carbonated, has zero head (it's like pouring wine), and despite having a strong ginger smell & a reasonable amount of ginger heat, it has something both in the taste and smell that is slightly...

Toucan Kona Stout + ginger beer

Stout update: 6 weeks after bottling, the coffee flavour - whilst still dominant - is becoming less & less like an added shot and more like just simply a strong coffee flavour, if that makes sense. As for the ginger beer... After a bit of a delay with sorting out an FG I ended up bottling the...

A fine mess you made of this Malcolm.

Kind of like a video Curriculum Vitae to let the minors/independents know how he'll negotiate? Malcolm's was something about "Jobs", and "Growth"

Toucan Kona Stout + ginger beer

I cracked open a bottle of the stout over the weekend, here's what it looks like: As you can see the head isn't uniform nor fine as say a Guinness head would be, and it disappears after about a minute. But the carbonation for a stout is spot-on, it's thick, and it's strong. The only...

    Love the fizz

G'day Evo, I'm also from Gippsland & joined here recently. I brew using kits & have two fridge setups outside, they work well both in summer & winter. I have two fermenters & use the fridges for both fermenting & bottle conditioning. Setup 1) Upright fridge, fan heater, STC-1000 temperature...

Toucan Kona Stout + ginger beer

Update on the Kona Stout: The hydrometer's been sitting on 1020 since Friday, so I figured this must be its FG & bottled the stout today. It's thick stuff! I did a taste test and I've found that the coffee flavour dominates now. I know it's very early days & the true flavour won't be known for a...
