    M54 California Lager Yeast

Hi Brewers, I'm using an M54 California Lager Yeast for a fresh word lager kit and it's giving off a banana aroma during fermentation? Is this normal with this yeast?

    Ferment lager with ale yeast?

Can you use an ale yeast and ferment a lager (fresh wort kit) at 18deg?

    Lager

After a lager has fermented out and bottled, can I just store it in a cupboard at room temperature?

    Strainer too small

I have a strainer that's too small to sit across the top of the fermenter so I tie 2 pieces of dowel to it so I can use 2 hands to tip up the pot.

    Brewing kettle.

Hi Brewers Moving into extract brewing. Do brewing kettles heat the water and allow you to boil the ingredients in the same container? Do they have their own power supply and other features like a cooling system? Only looking at partial boils for now, 19L or more.

    Crisp mouthfeel.

How do I get a more crisp mouthfeel with my kit beer? Is adding cracked grains such as rice grains or crystal malt the way to go?

    Capping PET bottles.

Hi brewers When capping PET bottles do you just screw them on finger tight or do they require more pressure?

    Hop combo.

Hi brewers I'm looking for a 2 (or 3) hop combination to produce a sweeter beer along the lines of 150 Lashes. In the past I've used an Amarillo and Nelson Sauvin pairing, also Nelson Sauvin, Amarillo, and Simcoe with varying success. Maybe need some bittering to round all that out? Anyone...

    Hops

Hi Brewers The Coopers Fruit Salad Ale recipe says to make a “hop infusion” by mixing the Cascade and Amarillo hops in a couple of litres of water just taken off the boil and allow it to steep for 30 mins. Would it be better to steep them in 2L of boiling water and 500g of LDM? Or would it...

    Innkeeper's Daughter Ale

Hi brewers I'm currently drinking Thomas Coopers Innkeeper's Daughter Sparkling Ale. It's one of their new kits, and in my opinion, the best tasting of the new lot. It's brewed with the can and 1.5kg Coopers Light Dry Malt which gives it a full malt driven palate with mild fruitiness with a...

A case of over-carbonation in bottles!

Hi brewers, I'm drinking the Thomas Cooper's Inkeepers Daughter ale brewed with the kit yeast. When pouring it I get half a glass of foam. In desperation I tried taking the cap completely off (24 hours before I intend to drink it) for about 10 seconds and screwed it back on . A loud hiss...

    Best method to boil hops?

Hi brewers, What is the best type of cloth or bag to steep hop pellets in to avoid having to strain them out of the liquid later? And where is the best place to purchase same?

    Dry hopping.

I dry hopped with 25g of Nelson Sauvin hops in one of my APA brews. It provided a wonderful fruity taste and aroma for about a month in the bottle, then began to diminish after that. Is this the normal result when using the dry hop method?

    Fruit Salad Ale

Hi brewers With the Fruit Salad Ale, if I brought the water volume up to 23L, would it detract from the quality of the recipe? Ingredients 1.7kg Australian Pale Ale 1kg Coopers Light Dry Malt (2 x 500g) 25g Cascade hop pellets 25g Amarillo hop pellets Top up to the 21 litre mark with cold...

    150 Lashes clone

Hi brewers The 2nd last brew I put down is a 150 Lashes clone. 1 can of Coopers Aust. Pale Ale 1 kg of light dry malt 12g Amarillo hops (steeped in boiling water) US-05 yeast 25g Nelson Sauvin hops (dry hopped) After 2 weeks I tried a bottle and it has the classic sweetness of 150 Lashes but...

    Hopping techniques.

Hi brewers, I'm only brewing from the Cooper's kits at the moment and adding extra hops. Can you explain the different hop effects according to when/how they are added? For instance, will I get the best hop effect if I steep them in boiling water and add them to the wort at the beginning? Or...

    First dry hopping attempt.

Hi brewers, I tossed 25g of Nelson Sauvin hop pellets commando style into my 150 lashes clone after 8 days fermentation. Two days later the inside of the fermenter is spotted with what looks like small bits of hops or yeast, and a layer of yeast is sitting over the tap section. Is this normal...
