    I use my herms setup for sous vide. It seems a waste to cook a steak any other way. Also do chicken wings in marinade for 3hrs at 65.

    I bought the Chinook from DrSmurto last season and it did extremely well for me, and I would use the term "somewhat different than commercial" very lightly haha.

    my reasons are; 1. measuring outside of the FV is imprecise anyway. 2. keeping ambient temp is easy. If you have the probe on the outside of the FV (with some insulation from ambient air as well) then how long does the compressor run and how cold does the ambient temp get before the liquid...

    thats good to know, im guessing the heat during fermentation negates the difference of outside temp. tbh ive never monitored during active fermentation in the night and just assumed on a colder night it would also drop inside the fridge. when I setup my equipment, I had tested with an empty...

    Froached Eggs

    might have to try this, though I love my eggs alot and dont like to add any 'flavours' not even bacon. I just want that oozing yolk goodness. my favourite way to cook them at the moment is 75deg for 15mins in the shell, then cracked straight onto the toast and some salt.
