    By top clear are you referring to the white bubbles alomg the top? Looks like bubbles from fermentation (krausen) to me.

    Yeah my bad habit is probably more the making of sudden changes and not keeping good notes so if its good I'm not sure I can replicate it again. Then again I probably wouldn't follow my notes next time anyway [emoji1787]

    I've never been able to watch my yeast ferment but it sounds unusual for 3068. I would ferment around 20-21C but dont think 18.5 should cause it to drop out. Can you take a hydrometer reading to check its not the tilt reading wrong? Even without a starter it should be fermenting. Low pitch rates...

    How old was the wheat malt? Did you mill it yourself or was it pre-milled. Sounds like oxidation to me but maybe old grain?

    Basically lower temps reduce ester production by the yeast giving a "cleaner" fermentation while warmer temps will increase esters. Depending on yeast strain this can be a good or bad thing. English strains can give fruity or floral esters so fermentimg warm within the temp range of the yeast...

    Keep the recipe simple, use a noble hop variety like hallertau for german or saaz for czech pils and make sure you have a healthy yeast starter. Also mash at a low temp (i usually go for 65C) to keep the finished beer dry.

    Hey yeah went really well, ferment took off quickly and dropped nice and clear as always. I made a sparkling ale which I'm drinking now. Nice dry with a slight bubble gum ester.     Yeah I had that thought and don't really have a problem with a brewery not filling another brewers growler. I suppose it could open a whole can of worms, good job I like the beers from the original brewey and it's not too far out of my way on the drive home from work

    Yeah I've just eaten a few to compare to the dried ones. Flavour of the green seeds is intense and has a really nice citrus aftertaste but I thought that may be lost in the boil. Looks like I'll have way more than I need for a single beer anyway so I'll be drying some anyway.

    Not sure what this says about my Christmas but this was definitely the highlight of the day. Had the regular tremens a few times bit this was outstanding
