I had acouple of pints of this yesterday and enjoyed it very much, a very quaffable session beer. With a plethora of very ordinary over hopped beers being labelled as Pale Ales and IPA's it was a welcome change.

I hang a fan over the kettle, pointing down onto the wort, works for me.

So can somebody educate me on the origins of Belgian, American, black, brown, white, red, and rye IPA ? Jeez I turn my back for a couple of years and look what happens.

Hi Matt. I had a pint of your bitter in the Earl Spencer the other day, not normally a fan of nitro, but this was very good. The gas usually masks the flavour making them all taste a bit the same, but not this one, plenty getting past the nitro. Good luck with the venture.

Thanks everyone. I actually read all of this thread and it was a healthy reminder of why I don't visit here as much as I used too.

My favourite comp, they always send lots of goodies. Apart from a hiccup with the WA drop off a couple of years ago, which was beyond the organisers control, it seems to be a very well run and efficient show.

Could reopen the brewery at the Sail and brew a real authentic original. Miserable bastards.

Grain bill looks ok maybe increase the sugar for the big alcohol thing. The trick with Belgians is in the fermentation and yeast selection, your schedule looks fine, but do'nt be afraid to let it creep into the high 20's after a couple of days. I am not too sure about the hop selection, try...
