    How Long Can I Keep My Brew In The Primary For?

    It's fine. I always keg straight from primary after 10 days and have never had any probs. If you don't want to carb it, just purge the oxygen out by burping the keg with CO2 then leave it for as long as you want. Any remaining cloudiness will settle out in the keg.

    I was going to suggest S-33 as I've used it in an 8%+ dark ale before and it finished out nicely. According to Fermentis, it can handle up to 11%. CraftBrewer have it for around $1 per 6g pack.

    It sounds like it's over carbing when not in use. I would suggest that perhaps your pressure is a little high or you could try just turning the gas bottle off when you aren't using it. I always do that anyway just in case there's a leak somewhere.
