Dry Yeast Pitching Calculators - What do you use?

Been looking at several dry yeast pitching calculators and there seems to be quite a bit of variance between them, which seems to be due to differing views on the cell count per gram. The extract below is from the Brewer's Friend website. Dry Yeast - billions of cells per gram: No one agrees...

    Wine Kit Yeast

I've just bought a wine kit and am going to give wine making a go. I know that with beer kits the general advice is to ditch the yeast pack from under the can lid and use a decent yeast. Does this also apply to wine kit yeast? Second question is regarding fermentation temperatures. The kit...

    Please critique my porter recipe...............

I'm wanting to brew a porter ready for winter and have come up with the recipe below. Can anyone who brews this style please offer any constructive criticism? According to Brewer's Friend it matches the style guidelines, but it doesn't tell me how it's likely to taste. I'm trying to steer...

    Food safe floats

I was wondering if anyone could suggest a small, cheap food safe float, either stainless steel or food safe plastic. I want to try and make a ghetto version of this.............. http://www.clearbeerdraughtsystem.com/info.html

Redds Apple Ale Recipe - Does anyone have one?

The wife has been drinking Redds Apple Ale lately, it's a sort of beer/cider hybrid. The label says "Crisp Like an Apple - Brewed Like a Beer" I only had one sip last night, but would describe the taste as a malty beer, very few if any hops, with apple juice added. I found it quite sweet, so...

    Jurien Bay WA - Oktoberfest

Just found out that the Men's Shed in Jurien Bay are having their inaugural Oktoberfest Celebration on the 10th October. Details can be found on their Facebook Page. Looks like a good day out if you're in the area. Or only two hours North of Perth if you want to make a weekend of it.

Acidulated Malt to 88% Lactic Acid Conversion

Hi, I was wondering if anyone knows the direct conversion for grams of Acidulated Malt to ml of 88% Lactic Acid. The table below is from the Bruakaiser website and leads me to believe that if I divide the weight in grams of Acidulated malt in a recipe by 35 it will give me the required amount...

    Confession Time.............

This is inspired by a similar thread on HBT. I'll start by confessing that I never use boiled and cooled water to rehydrate my yeast. I just use warm tap water. I'm also very lax when it comes to hot side sanitation. I basically figure it's all going to be sterilised when it boils anyway...

Fitting a bulkhead fitting and tap to a cornelius keg. Can it be done?

I'm currently fermenting in a couple of cornelius kegs and I'm considering installing a bulkhead fitting and tap to them so that I can draw off samples etc. I don't aim to pressurise them once this is done. They will be dedicated to fermenting. So holding pressure isn't a problem. Can anyone...

    Forgot to Oxygenate my Wort

Before I left for a four week trip away from home I brewed my first lager. I'm pretty sure that I forgot to oxygenate the wort. It's been fermenting at 10 degrees C for four weeks and I'm guessing that the yeast has been struggling a bit and throwing out all sorts of unwanted flavours. I get...

    Chilling in Summer

I brewed my first lager today. It was well over 30 degrees in the back yard and the tap water was up around 25 degrees. I used my immersion chiller and a pond pump in a bucket of water with frozen water bottles in, but just couldn't get my beer down below about 30 degrees. I gave up in the end...
