    What the.......

I did a double batch that has been kegged for about 2 weeks. One keg turned pale at the end, photographed is the last beer from that keg. Is is supposed to be an amber ale like the glass from the other keg. I suspect that one cube did not have the starsan emptied out and has a higher gravity...

Yeast Nutrient For Yeast And Brewers

Its pretty well known that Australian soils are deficient in trace elements, especially zinc, and so the same can be said for our food. So its hardly a surprise that yeast nutrient (at least the stuff supplied from Craftbrewer) contains zinc. Its also pretty well known that the efficacy rate...

    Useing Gelatine With Chilling?

I am about to add gelatine to drop the yeast in a brew, but given that I also chill filter at 1C for 3 days I'm asking if its necessary, isn't the idea of chilling to clear and drop everything to the bottom? Thanks KOS

    S189 In A Hurry

I've got a two lagers cubed that will get some fridge space today. I usually do these at 12C but at this time of year I don't have the time for the long ferment. I was thinking about bumping the temp up to 16C speed things up. I'm sure I'm not the Lone Ranger here so tell me what to expect...

Careful With That Wort Johnny - A Near Miss

Put down a brew today, 2nd in 3 days trying to build up depleted stock (zero actually). I put my copper coil in the boiler to chill and discovered to my horror that the boiler must not have been central over the burner. The whole thing tipped towards me spilling 1 or 2 litres of hot wort. I...

    Marga Grain Mill Settings Moved?

I have had to drill another hole and re-set my marga mill. It has been working great till now but I have noticed my efficiency has dropped off the last few brews. I had a close look at the crush and noticed some whole grains in the mix. I always thought this would be a set-and-forget...

    Acetaldehyde In Aroma

Two of the judges at the Nats commented that they could detect acetaldehyde in the aroma of my Brown Ale. My thinking is that I should be able to fix this by raising the temps once fermentation is finished so the yeast can finsh all its work. I do this for my lagers but not ales. Am I on the...

Broken Temp Probe Wire - Can It Be Fixed

Are Some Yeasts More Susceptible To Infection

Reason I ask is that I have had about 5-6 batches using US56 in succession all come out with off flavours. Still drinkable, but not like they should be. I then get put off ales in general and do a lager using s189 which always turns out well, and then after a while try another ale and get the...

Double Batching & Forgot To Empty Hot Trub From The First

What do I do here? The first batch will be a NS lager using MO malt for extra body. Second will be a Pilsner. There was about 25mm of hot trub crap on the bottom which I poured over. I know my colour will be a bit out but am mostly worried about covering my off take tube with the second and...

Help With Knappstein Reserve Lager Style

I have tried to brew somthing similar to this several times and can't get it right. I think most help is needed with the hop schedule. Do I use NS for bittering as well, or only for flavour? What about aroma? Can we assume S189 and Pilsner as a given for malt and yeast. I have done a few...

Can You Shorten The Mashmaster Probe?

I want to mount my mashmaster thermometer though my kettle wall. Pretty simple except it will get in the road of my copper coil cooler. I have a few option (1) cut off a portion if the probe, (2) bend it or (3) take the thing out when while I am mashing and cap if off so its not in the road...
