    Probiotic Lacto for a Sour

Cheers for the info! Looks like the IBS capsules are the way to go with Lacto bacillus Palantarum. But isn't most L Palantarum strains hetrofermative? I might try 0 ibu (due to the very low hop tolerance of this strain) 30 degree pitch 4 caps in 20l wort for 24 hours then sample. Im not...

    Mangrove Jack Craft Series Yeasts

Interesting observations Malty Cultural The renaming seems very imaginative. But I think the original names weren't necessarily accurate the the first place. Ive always suspected M07 BRITISH was WLP007 whitbread dry / WY1098 British Ale Yeast / Safale s-04 - Fermentis But I originaly though...

    Mangrove Jack Craft Series Yeasts

technobabble66 The relative attenuation is supplied in the Mangrove jacks yeast booklet. But I find dried yeast is a tad lower. https://cdn.shopify.com/s/files/1/0195/8620/files/MJ_Craft_Series__A5_Yeast_Booklet.pdf?1935 And I suppose i can see why they dont compare directly. Maybe (although...

Calcium Lactate Buffers in the mash: Water chemistry Qs time...

Tx for trying to kelp my understanding Mark. So lactic acid... C2H4OHCOOH , in solution, loses its proton at 3.86 pKa from the carboxyl group becoming H+ and the lactate ion CH3CH(OH)COO− But its different to aqueous Calcium Lactate ( [Ca]2 + 2[CH3CH(OH)COO]− ) because Calcium has a greater...

Calcium Lactate Buffers in the mash: Water chemistry Qs time...

Tx for the detailed reply. I read Kais report as though he had used Ca Lactate " Both calcium lactate and sodium lactate tasted very similar in water which shows that sodium doesn’t necessarily lead to a salty taste. I decided to go with calcium lactate since calcium is generally the dominant...
