    Thanks for the detailed answer. The rest of the world also thinks metric is the way to go. I only use brewmate because it is easy and basic to use and I am used to it.

    Grain extract

    I use Brewmate for my basic designing. I want to add more fermentables. It seems to require a SG figure but all the grain data I find gives a %. Anyone know how to convert?

    Heating brew fridge

    Have I misread or why wouldn't you put the heat belt on the fermenter and measure the temp of the wort itself? As yeast can create some warmth when fermenting. The more mass you have in your fermenting chamber, the more stable the temperature will be. Mass can simply be some bottles of water.

    Without double pole, it isn't safe and won't meet Australian standards. The STC 1000 had a few scary safety issues. Double pole switching is necessary to switch both current carrying conductors. Suppose someone replaces the lug top and wires it incorrectly or plugs it in to an extension cord...

    Does anyone remember the old cooler Swan Breweries made. CS cooler? It was a hop based cooler rather than wine based. Never been able to get any leads on it's make up.

    I was just keeping it simple. Beginner's style. Use any container you want. DAP is just a very basic cheap yeast nutrient. If you have better, use it. Also, US05 will work ok as a yeast.
