    I have reused the yeast cake from a beer with clarity ferm, but I think I took the cautious approach and put more in the following batch. I would be interested to see if it works through multiple batches.

    I would imagine the water would be fine. Go with Danestead's advice and bump the temperature up. The couple of saisons I have made started around 17 degrees and then went up to 22 degrees for a few days (in a temp controlled fridge with heat source), then up to 28 degrees for a week to finish off

    just curious but is that 4 kg of rice malt for the batch? Now down to your issue. Did you use a refractometer or hydrometer to test the gravity? and does hydrometer read 1.000 in tap water? If 1.040 is in fact the correct number then either your yeast isn't playing nice or your rice malt...

    Two dry yeasts and 1 liquid yeast for the bassandean brewery according to the brews news podcast. I'm guessing the liquid yeast is for feral white. Fresh sly fox is awesome in my opinion

    Huge beers

    if you were worried about hitting your numbers you could try 2 consecutive mashes, taking only the first runnings from each, or try a reiterated mash. Extra time required of course, but they are things I've used to get high gravity wort. Or just add some sugar...

    Little help about my recipe

    For me there's too much crystal, over 10% is too much for a pale ale, combined with the high mash temp will result in a high FG. I'd add more yeast if your only using 1 packet, 7.3 kg of grain for 25 litres is going to make a pretty strong pale ale (depending on efficiency of course).

    I think PET allows for a little more oxidation than glass, so aging in PET is generally not as good. But your right, many comps/swaps don't allow glass, so it can be tough for some aged beers to enter in comps.
