    Counter pressure bottle filling ...

I've been reading a little about Fermentasaurus and that one of its features is that it can ferment beer under pressure, thereby carbonating it during primary. This is good news for keggers, from what I understand, but I'm still a lowly bottler. However! I'm told that there's such a thing as a...

    Hops and temperature

I'm graduating to all-grain and considering no-chilling, so that means adjusting hop schedule, right? Well, what if I am able to bring the temperature down a little right after the boil so that I don't need to? I've successfully been adding ice to my extract brews and partials for some time now...

Weird infection experience I thought was worth sharing

Last Tuesday I was sure that a fairly experimental lager I was brewing had become infected as the sample I drew tasted horrible and sour - it was pretty much vomit-worthy, and I was in the middle of a flu that kept me away from work for a week so it must have been a strong taste! I continued...

    Oktoberfest, extract style

I've been looking into making an oktoberfest(/marzen) lately, but as a guy living in a small unit I just don't have the space for AG gear so I'm brewing extracts and partials (and the occasional K&K ... shhh). This puts me on the back foot straight away because a lot of the malts used aren't...

Can't tell if sweet or bitter ...

My latest amber ale is a bit weird in a way that is starting to seem common among my extract based brews (ie. un-hopped malt, 10L boil, big mess to clean up). The problem seems to be that I can't tell if they are too sweet or too bitter. There's this kind of taste separation thing happening...

    Priming with brown sugar?

I accidentally left an ingredient (brown sugar) out of the last recipe I brewed and didn't remember for quite some time so I didn't try adding it later for fear of introducing an infection. Yesterday, however, I realised that all might not be lost - I could potentially prime using the brown...

I'm new to designing recipes ...

    ... so I'd welcome any comments on the following one so that I can gauge how I'm going a bit. 1.5 Kg Light LME 1.5 Kg Amber LME 500g Light DME 350g Caramunich 50g Chocolate Malt 6L boil with ... 30g Cascade @ 60 25g Cascade @ 45 15g Cascade @ 20 15g Cascade @ 10 15g Cascade dry hopped 23L...

    Viking beer ...

Any thoughts on this recipe? http://distantmirror.files.wordpress.com/2010/03/scandinavian-sahti-recipe.jpg I'm interested in trying the extract version, so here's what I've come up with as a metric conversion: 3kg Pilsen LME (they ask for 8lbs, which is more like 3.6kg, so might ad 500g LDM...

Final gravity for Black Rock cider kit?

I currently have a "winter cider" fermenting away, made from a Black Rock kit and a kilo of dextrose plus cinnamon and vanilla. The only problem is, I don't know what sort of final gravity to expect. It's been slowly dropping over the last two weeks and I intend to give it another week anyway...

    Vanilla?

I'm looking at making a "winter cider". Rekorderlig have one available that has cinnamon and vanilla, and I've used cinnamon before so I know that two teaspoons is all I need, but I've no idea how much vanilla to use, nor do I know whether to use extract or essence. Anyone have any...

Whoops, Threw Out The Cider Instructions And Don't Know How Much S

Hmm, title got cut off. Basically the instructions told me how much sugar to prime with but they went out with the rubbish over a week ago. Is it just the same as beer? I've got one of those double-sided scoop things and I use the big side in my long-necks ...

Are All Liquid Malts Created Equal?

I'm a big fan of the Coopers products but there's not a store within cooee that carries the higher-end stuff. The local Brewcraft sells liquid malts by Briess and Black Rock ... are they all essentially the same as each other? Would there be a noticeable difference from one to the other?

    Stock Pots

As I'm graduating from kit 'n' kilo style brews I can see that I'm going to need a pretty big pot to steep and boil stuff in. So ... What to look for? What to ignore? Where to look? How big? Any other considerations? (thermometers?)

    Worried About My Latest Batch

I recently brewed a batch of beer that I was really, really looking forward to and it seemed to be going great at all stages, but after trying the first bottle there seems to be a few things wrong with it. I think (hope?) that all it needs is time - and it had only been in the bottles for 11...

    Does It Exist?

So, wouldn't it be easy if there was a device which switched between normal mains power sources according to temperature? I'm imagining some kind of double-adapter style thing with a temperature sensor which you can simply plug normal mains plugs into. Fridge would go in one, heat mat in the...

Where To Get Cooper's Malt Extract Cans

Does anyone know of an online store selling Cooper's malt extract cans (I'm after the amber) that doesn't charge $15 delivery? Alternatively, are there any shops in Adelaide that stock it? The only place anywhere near me is a Brewcraft so I'm kinda stuck at the moment.

    So, What Now?

I've just started my fourth brew using simple ingredients (Cooper's can plus "brew enhancer") and, when it's done, I'd quite like to know what the next step is. Hops? If so ... what are they? What do they do? Where do you get them? Most importantly though ... how do you add them? I'm sure...
