    Bia Hoi

If you've been to Vietnam, you've probably drunk it. It's literally cheaper than chips, is rather bland, but not awful, goes out in barrels not long after brewing (bia hoi means fresh beer), has an abv around 3.5%, and isn't all that bad. It is supposedly a lager. The grist comprises malt and...

    Russki Beer

Finnskis join NATO provoke mother Russia. Soon, tovarishi, unstoppable army of mother Russia sweep west denazify all Europe, maybe Kangarooland and Yankeeland also. Or blow up everybody in wonderful tragedy like Tolstoy write. So, besides so-called Russian Imperial Stout English Nazis invent...

What is the point of a Hochkurz mash?

I've done them and liked the results on lagers and on ales, but none was in a side-by-side comparison with an immersion mash. Rationales generally run to achieving a desired balance between products of the action of alpha- and beta-amylase enzymes. But that's what infusion mashes at, say, 65...

    Socialist Beer

Small to medium-sized, privately-owned breweries shaped beer, first traditional styles, later new craft beers. The conglomerates? Your call. Of government-owned breweries, two in the non-communist world have made good beer and profited. Reports vary on what happened in communist states. The...

    Zappa Hops

Keg King lists these. It seems they're from a wild New Mexican line and have a highly distinctive and powerful flavour that offends some and pleases more. Like Frank Z. Has anyone here tried them?

Effect of lockdowns on home brewing

Maybe some of the brewing suppliers can answer the question about COVID's effect on business.

    RIP Broken Shackles Lager?

Temporarily unable to brew, I browsed at First Choice. By the door they had a display, a close-out offer of Broken Shackles at "half price," $20 for what looked like a slab, 24 x 330. I avoid beers advertised as refreshing, which generally means they're wet and drinkable at Arctic temperatures...

    Gladfield malted corn

Has anyone tried it, either alone or with other malts? If used in a mostly barley-malt mash, is there any advantage in taste over flaked, unmalted corn?

    Beer Busts Gangsters

It seems the monster sting that has netted 800 arrests worldwide began with a conversation between AFP and FBI agents over beers. Never would have happened if they'd been sipping chardonnay. Instead, they would have discussed how the Venus de Milo lost her arms or the traveling Picasso exhibit.

    NEIP ... L anyone?

A few breweries have come out with "New England India Pale Lagers," Two Birds, for one, as well as several US breweries. My first reaction was that it's a bad idea or a silly try at being trendy, but on second thought it might work if one uses pressure brewing. I can't and therefore cannot try...

Are AIPAs passing their peak in popularity?

Beer Advocate's Todd Ahlström suggests they are, but their clientele in largely in the US. https://www.beeradvocate.com/articles/10473/lupulin-madness/?utm_campaign=beerthreads&utm_medium=email&utm_source=Revue%20newsletter In Australia they never were as dominant in brewpub sales as in the...

Bottling, Kegging and How Long to Dry Hop

Extraction of hop oils mostly takes place within 48 hours of dry hopping. Biotransformation is the usual reason given for longer times. But biotransformation is a process affecting hop oils in solution. So why bother with an extended dry hop if it's going to continue in the beer? My guess is...

Something Old, New and a Little Different

Perfect marriage: old, commercial and largely lost North American ale style (see History, below) and the modern hop Loral. Loral is a good stand-alone hop, with excellent bittering and a character that is more assertive than noble hops and less so than most of the hops we use in APAs and AIPAs...

    Pressure fermenting vs lagering.

I tried to find any side-by-side trials of lagers produced by pressure fermenting and brief conditioning vs fermenting at normal pressures and lagering. No luck. I'm sure major breweries have done it, but most keep their experiments private. Does anyone know of any?

Aussie honeys in Aussie and American beer recipes

Australia offers a greater variety of honeys than anywhere I've been. Throw 500-1000g into a 20L batch of beer, and the flavour of the beer should vary greatly with the honey. I don't brew many, but others here may have experimented with different sorts. A caution if anyone uses a honey beer...

    Dingemans malts will return.

After finding various Dingemans malts out of stock at several home brew suppliers, I sent them a query. The answer came back that they will shortly fill an order from Cryer. Given shipping times it will presumably be a while betore any reaches retailers.
