    55 isn't very bitter. It depends what stout you want. If you want export stout use 2 cans and some black patent along with some LDME.

    Nothing wrong with plastic. You can buy 2L bottles of 9.5% porter in Poland in plastic soft drink bottles for anywhere from $1.50 to $3. Of course, Australia has the most retarded alcohol laws, so you'll never see that here.

    If you want a stout, use 2 cans of stout. The dark detracts from the bitterness and roasted notes.

    Best Coopers beer is the stout, which is excruciatingly difficult to find on tap in the lager minefield that is Sydney's pubs. I bet it was even better before they reduced the abv down, less watery. And yes, any stout is drinkable and tasty even if its 40 degrees out.

    <br /><br /><br /> If you used the standard lager kit, with the standard enhancer, it will only end up around 4%, if you want a meaty beer that you can feel as you swallow, then use less water, more malt, and maybe some dextrose to up the abv, depending on the style.

    I'd do 20L to boost the abv a bit. Otherwise its fine. I'd have more concrete amounts if I knew what stout you wanted. My favourites in order are export followed by imperial and sweet (stronger examples). These are "traditional" strong stouts (6%+). Or do you want a weaker dry stout?

    I'd use 2 tins of Stout for that stout flavour, and add in 300g of black patent. I'd also use 500g of brown sugar and use dark malt extract instead of light. I'd also consider some cara malt or chocolate malt.

    1038 is too low for a stout stout unless you like watery irish stout's. I'd leave it alone and keep the temperature constant at around 21 celsius. Bottle when you come back, then let it sit in the bottle for a week or two.

    Does anyone know anywhere in inner Sydney (CBD, Alexandria, Darlinghurst etc) where you can get some Southwark? Its harder to find than a free brothel. Despite the pasteurisation it is a very good foreign stout. Anyone?

    Tasted the first bottle. No head, thick, oily, very small amount of carbonation, tastes like a fruit pudding soaked in alcohol with a slight amount of roast. Will leave the rest alone for quite a while yet.

    Ignore the airlock. You don't need one. The beer is done once SG is the same over 2 days. The abv is low because you didn't put many fermentables in and put in a lot of water. GIve it 4 days more, then it will be ready to bottle. At this stage, the yeast will be cleaning up after itself.

    I'll be bottling with one carbonation drop for this batch, as I prefer stout to be mildy carbonated, not fizzy macro piss, and an RIS doesn't need too much carbonation. I'll definitely store most of the batch somewhere safe for a few months, even though I'll be using PET bottles for this batch...

    Its Day #9, the SG is 1.017 (OG was 1.090), I had to give the hydrometer a spin, it was reading around 1.026, must have had some air in it.
