Banana In A Classic American Pilsner

Well I have just started to taste my kegged CAP and it has one of the telltale signs of underpitching...banana aroma and flavour. I thought I pictched a decent amount of yeast but I think I rehydrated in 1040ish wort and hence probably reduced viability by half. The effect was probably...

What Do You Buy A Carton Of?

Pilsener Urquell!! What a smooth pils this is. I have only bought a few cartons over recent years but this is one of them...also XXXX when my father in law is around!!

    Simcoe

I agree on the Simcoe and Riwaka combo. I made an APA with these two and it turned out very nicely. This is my next brew! How much of the pineyness will come through with only a dry hop addition do you think? I suppose it would be plenty as it is the pinene content that results in this. I...

Set Up For Biab Keg Tun.

I have a keggle for BIAB. I use a copper pick up tube attached via a compression fitting from CB. The way I have it set up leaves about 1 litre of wort in the keg. Of course it depends on where the end of the pick up tube is. You can arrange it so that the pick up tube drains from the bottom of...

Grain Of The Week - Rye

I just started this off yesterday and is my second beer on a new keggle using BIAB. I have grown a bit tired of in your face fruity hops :icon_vomit: and so made one with lots of Czech saaz for a more subdued flavour and aroma. I would normally only boil for 60 mins but was a bit out of whack...

    RecipeDB - Jever homage

Sounds great but do you not want decent sulphates to enhance hop bitterness and flavour? My style of beer!

    Mashing Raw Wheat?

BJCP style guidelines suggest soft wheat i.e protein at 8 % or thereabouts. I do remember an article about this very subject and a well known brew guru did advise to cook the grain. Gelatinisation is not the only change that is desirable in unmalted grains. The enzymes must have access to the...

    Mashing Raw Wheat?

I would cook the wheat to open up the starch granules. This will allow access for enzymes. I can't imagine just mashing bits of wheat or rolled wheat without cooking first. I would imagine that the efficiency is relatively poor. Hope yours is good. I made one this morning with lots of rolled...

Do I Need To Cook Rolled Oats Before Mashing?

Slightly off topic but....................Rolled oats or wheat needs to be cooked to allow the starch busting enzymes to have access to the starch inside the starch granules inside the grain. If you are adding just rolled grain your enzymes will have limited access to the starchy goodness. Of...

Ibu Adjustment For Water Profile Mistake

I meant to mash my pils grain for a german pils and mistakenly mashed my grain for a belgian dubbel...it was late in the day after a few beers with mates Anyway, I added gypsum to about 150ppm sulfate to the mash water and reduced the IBU to take this water profile into account. So now I...

    Nelson Sauvin Pale Ale

I just tasted the first bottle of my Nelson Sauvin ale. The grain bill and hopping schedule are as follows. 1 tsp gypsum for a 15L batch. Yes, horrible efficiency !!! This tastes great....nice quenching malt with good hop bite and flavour. I love Nelson Sauvin...quite a complex hop aroma and...
