after downloading and getting excited about using the forno bravo instructions (Pizza oven plans - Build an Italian brick oven - Forno Bravo), I decided it might be a little outside my skill set, so with a nice little tax return, i bought myself a Melb Fire Brick Co D95 back at the start of 2021...

    Cooling Wort

i started to do this about 15 years ago, when Melbourne was still dealing with water restrictions to save water on chilling. i still use this method now sometimes. the biggest issue seems to be the worry about leaving the wort "exposed" to other microbes overnight, but i always make sure that i...

    Short Final Gravity

fill the hyrdometer tube 3/4 of the way up, cover the top and shake a few times, you will hear a "pfft" of co2, when you lift your hand off the top, thats co2 in solution. I usually take my sample in a little jug, then pour it back and forth a few times between the jug and hydrometer tube to...

Closed cold crash in HDPE fermenter?

Hi Simon, Yep i used to do exactly what you state all the time. but guesstimating the amount of pressure the HDPE could handle was tough. i found it much easier to chill first and once the fermenter sides suck in, add the gas. then you have a clear visual indication of how much to add. i...

    Gravity/Alcohol question

as this was a patial boil, are you sure you dissolved all your brewing sugars perfectly? when i was extract brewing, i often got incorrect hydro results as i didnt dissolve 100%, and took readings from the tap of the fermenter, down the bottom where all the heavy sugar was.

    Dark Munich smash

a practice i have started using is to de-gas my sample before taking hydrometer readings, by pouring the sample back and forth between 2 glasses at least 10 times. this will expel any residual co2 from the beer sample, giving a true hydrometer reading.
