    Hi Weal, I didn't but I figure that would make a minimal difference. The sample was room temp or maybe slightly cooler - I do need to get a thermometer that reads lower temps. When I have used the Hydrometer Temperature calculator, temp wouldn't seem to account for such large difference.

    I would recommend a manifold. I don’t have one yet (will buy soon). I just set it up with the T- splitters and it’s manageable but a bit messy. Plus moving clamped lines around does make me a little nervous of pulling something too hard and creating a leak.

    If you are after a kit that has sweetness try the Mangrove Jacks Helles from their craft series. One of the pouch ones. My first go at this is ready to drink now and is exquisite. Best kit I have tried and has a definite balanced sweetness. I too am curious as to how they get it.

    Personally I'd reckon 2 weeks is enough. Then you can get onto another brew. If it's only your second brew you'd be wise to get a stockpile growing I think. She's not a bad drop the old smugglers. I have one about 4 months old now and I wish I hadn't gone through it so fast. Good luck with it.
