    It probably depends a little bit on your preferred level of carbonation. Having sat at that pressure for 15 days, it is likely as carbed as it is going to get at that psi. I generally run my beers anywhere from 75-100kpa (approx 11-14.5 psi), but I am quite happy to drink beers at the lower end...

    How did you measure gravity - hydrometer or refractometer? If using a refractometer you need to adjust for alcohol content.

    It depends what you are trying to achieve with your cold crash. I suspect most people are just doing it to drop as much yeast as possible out of suspension. For this it is simple - once you are happy fermentation is complete just drop it as cold as you can manage as quick as you can manage...
