Just sparging and realised the pack of Amarillo I have is actually Simcoe. Should I just sub it in? The only other hop I have on hand at the moment is a heap of Motukea. Should I bitter with Motukea and flavour /aroma with Simcoe or just go all Simcoe? Thoughts?
