    Wine taste!

Great to hear that it turned out Curly! Hopefully that is the start of a lifetime of experimenting and improving your beers.

I've said it before mate but hops will be the key to what your after - not necessarily yeast or malt (although they'll help)

    Sweet Stout Recipe

Hi fortmonty, I ended up brewing the same batch again but with Nottingham yeast. Finished a few points lower but talking to folks on another forum I think the problem was that I didn't oxygenate the wort sufficiently before adding the yeast. I reckon I'd also drop the lactose by 50 grams or so...

Cascade is an American style hop which will produce similar aromas to what is in the Sierra Nevada pale ale - you'll be amazed at how much difference adding a bit to your fermenter will make to your kit

Reminds me of the time I was having a BBQ in a park with my extended family. We had just used the public BBQ and were hanging around eating in its general vicinity as it was under a gazebo. Pretty much the only other person in the park was a guy kicking a ball with his kids. Guy then goes to...

    Wine taste!

Drinking out of the bottle definitely effects the smell (as you pretty much don't smell the beer at all when the bottle is in your mouth) and therefore the taste. Much of our taste is dependent on smell. Try eating something fragrant like a curry holding your nose. You should always drink your...

    Wine taste!

Maybe next time try upping the malt extract and reducing the dextrose to give it a bit more omph. I just brewed a kit beer for my brother which is fermenting away - from memory it was Tooheys lager kit, 1 kg LDME, 400g dextrose 200g maltodextrine and about 10 - 20 grams of Amarillo hops at 10...

    Heat belt too hot?

Wet suit is an awesome idea! Here's my current setup - actually working a charm and keeping fairly constant temps at its lowest setting. Not bad for a radiator that cost around $20 - $30.

    No carbonation and cloudy

What luggy said :) There appears to be signs of carbonation so that's good.

    Heat belt too hot?

After purchasing a heat belt and then reading horror stories of burnt fridges etc I didn't want to leave my heat belt on overnight or whilst I'm away from the house even on a temp control (although its only really needed at night). I found if I switched the heat belt on when I got home from...

    No carbonation and cloudy

Were they dead flat (ie no gas sound at all when opening) and was there any sign of yeast on the bottom of the bottle? Also, are you talking about your shed reaching 12 - 15 max because depending on where you are the overnight minimums have been near freezing

Take it to the continuing happiness thread wide eyed and legless. Some of us are trying to be grumpy ;)

Yeast will still behave in the bottle like it does in the fermenter i.e. The yeast will take longer to do its thing at lower temps (although you don't have to worry so much about temp variation in the bottle as there is minimal sugar to cause off flavours). I'd store them at room temp for a...

    Wine taste!

I think your beer will improve by leaving it longer in the bottle (14 days absolute minimum) and upping the amount of malt extract. Also, I avoid the lighter kits and go for the stronger ones such as dark ale, real ale, stout, English bitter etc IMO they are easier to get a better result with...

    Continuing happiness

Happiness is pouring the first beer of a batch after having lovingly brewed and nurtured it. I've also discovered a whole heap of brewing related YouTube channels lately which keep me pretty happy during the week - always pick up a tip or two.

I haven't watched commercial "news" on tv for years, although I will look at news.com.au and wonder why I wasted the energy typing the URL in every time. Its like a bad dirty habit (perhaps I'll go blind). Sad thing is that half the content is absolute piffle imported from the US. Its not...

    Beer Kits and Brew Enhancers

Good stuff - assuming you end up with an FG of around 1.010 you should be at about 5% abv. 500mls won't be enough to affect the body of the beer I wouldn't imagine. 2 packs of yeast will also be fine.

    Beer Kits and Brew Enhancers

500mls over won't make much difference (it's only about 2% over). It's good to get into the habit of taking gravity readings with a hydrometer though if you haven't already. Cheers

    Sweet Stout Recipe

Sorry for bumping the thread again. My gravity is still over 1.030, still getting action through the airlock although the gravity reading would suggest its probably stopped fermenting. Any ideas what I may have done wrong so I can learn for next time? The only things I can think of is that my...
