    I have to also recommend the esb 3kg kits they turn out fantastic and no need to buy too much extra malt/ add to much extra stuff to get something decent which justifies the higher price. I'm not a fan of the fresh wort kits as i dont think they hold up as well in the homebrew shops but ymmv...

    Ginger Beer Recipe - Scratch Brew No Kit

    Great thing about this recipe is you can reuse the ginger you strain out, freeze it in small portions, and use it for lots of things with cooking. Think it might make a nice addition to a pumpkin pie made some nice ginger chicken the other day.
