did your 3787 go mental (overflow, krausen at heights you couldn't believe possible, climb out of your fermenter and grow legs and create its own city etc), even on a lower strength beer?

it's an ale yeast. i've fermented it as low as 15c but i had to overpitch. i would just ferment it at about 17c. it'll be quite clean at that temp.

you won't be disappointed. to be honest before i brewed that ipa i wanted to see what others' experiences were and i honestly couldn't find much written online or blogged etc. so glad i gave it a go. it's a really lovely unique flavour that i found works just as well late as early.

brewed up a nice hoppy pale ale/session ipa yesterday. new leaf session ipa 85 pale 10 wheat 5 caramalt 1.050 - 66c galena at 60 chinook, simcoe, cascade at whirlpool for 20 mins chinook, simcoe, cascade under 80c for 10 mins 50 ibu us05 at 17c amarillo, chinook, simcoe, cascade dry hopped sexual.

additionally, if I do add gelatine to fermenter and then give it a good swirl around, does rousing all that trub affect it negatively? I've never tried it as I assumed that the gelatine would not be able to fine ALL of the trub.

looks amazing mate nonetheless. i also got that from 34/70 but fermented at 11c. i'm not a fan of it. it does clear out and mellow and becomes lovely, but takes a long time for mine.

agreed. i've had a lot of american ipas that have used it dry, and it gives a lovely unique change to the typical citrus aromas.

i just saw recently that there is a carlton pale ale now. apparently hopped with amarillo and cascade. hahaha right.
