Red Ne-IPA (hopping, yeast and scheduals for the jusiest IPA?)

I would be looking to adjust a number things, like Droopy said, firstly drop the IBU, the style is more about low bitterness so somewhere around 50ibu on this and make sure you have your Chloride between 150-200ppm and the sulphate half of the chloride ppm. FWH 50% of IBU - just use columbus or...

Just how DO you get that juicy IPA taste and aroma?

I get that throat feel from the style which I think is from a combination of the higher Chloride (200ppm) combined with the heavy late hop oils retained in the beer? MHB may have a better idea of that. It does seem like a biting flavour from the ones I have made and tried from commercial...

    Mashing in cold

Well Id say it doesnt have any negative affect on conversion provided the pH is within best range of 5.2 - 5.8. Infact since i started overnight mashing the efficiency of the mash and overall BH % has increased by close to 10%.

    Thick viscous beer in fermenter

The taps do come apart which is easy to do, I take mine apart every beer and clean/sanitizer it before the next beer. Or you could just buy a new tap, they are like $3 bucks at Bunnings, you won't need a new fermenter if the tap is the culprit.

    Whats In The Glass
