    Also, adding dark grains later saves pH hassles with your mash. I use Carafa spec II in mine, a good choice for the style imho.

    For my Black IPAs, I cold steep the black grains and add the juice to the boil. Gives good colour and some black flavour, but none of the flavours that I'd enjoy in a stout/porter. For slightly more black flavour you can add your dark grains at mashout instead of cold steeping them.

    Do you have rats ? I've got the 60l mini wheelie bins, perfect for 25kg sacks. Put a half dozen in the walk in wardrobe, cause, well ,the rats won't find them in there. Lying in bed one night heard the sound of rats chewing, sure enough, the buggers ate through the lid ( the thinnest bit)...

    Make up some sugar syrup, let them dose to desired sweetness in the glass. I have a Dutch relative who loves those sweet Dutch fruit beers, works for her.

    When I was in the surf club we did seafood tray raffles at Fisherman's Wharf on Saturday Arvo's, God must have really liked us because one of the boat crew always won the last draw of the day, even without buying a ticket, divine intervention if you like. :D

    Coodgee, The fawcett/bairds brown to me is dry and almost coffee like. Taste is pretty subjective though, so others may think differently.

    The pacific ale is about 40% wheat ( I use 50/50 raw to malted wheat which you can't do via tins) so the closest you'll get is to grab a tin of the coopers wheat malt, which is actually 50/50 barley/wheat . If you want to up the barley % a bit add some dry malt.

I'm not sure 3600W for your kettle is enough ( it might be ), my kettle (70L insulated double batch ) has 2 X 2400 W elements, although I turn them down a bit once boil is reached.
