    Mate that is a bock. Probably a dopplebock. Aim for a SG of 1070 or so and bitter with hallertau to 20 ibus. Cheers

    Be prepared for a long ferment, and the krausen will hang around. But cold conditioning leaves a beautiful crystal clear beer.

    If it is your house why don't you split a batch into 6 small ones and ferment in various locations. I would be surprised if all became infected. You would use dry yeast and pitch equally. This may give an indicator as to the source. Ie 1 bad and 2 not so bad and 3 fine.

    I say this over and over, and I think I said it on the first 10 or so posts. These don't work on wild yeast. You are wasting your time with these sanitisers when you have a wild yeast problem.     my tip is add it after fermentation starts. retains more flavour. add a little water and boil it then cool it and add.

    Next time I use them I think I will go with my favourite Old Ale recipe, stolen from Tony, and use a little treacle. And add 8 dominoes with holes drilled out for a month.

    What happens if you did a minimash with the rye and some malt and boiled the rye portion on the stove then combined at whirlpool with the main batch? I really want to make a rye barley wine with 20% rye.

    Boys i used some dominoes a few weeks ago in an RIS. Was weird. The beer had completely finished. Added the dominoes after steaming them for five minutes. They seemed to get some whitestuff around them. I pulled one out and it looked like CO2 was collecting on them. i bottled and will drink one...

    Are you using star san for anything? this will not always kill wild yeast. What plants do you have near the location of brewing and fermenting. it could be coming from one of those.
