Ginger Beer Kits - hit and miss

I use raw sugar in my ginger beers. Makes up about 1/3 of the fermentables. I use the coopers tin, 500g dex, 300g LME, and 700g raw sugar. I boil 5 lemons and 2 rinds plus 100g fresh ginger in the dex and "dry hop" 150g fresh ginger 2 days before bottling. I've only done 4 of these but the...

Ginger Beer Kits - hit and miss

Brew temps always the same? I accidentally let one hit 28 and it tasted different. Not terrible, just worse than my usual 20 degree brews

Honestly I'm not sure where I stand on the Usa gun laws, I don't live there and only see what the media shows me. There is definitely more gun related deaths in the USA than here, whether or not thats to do with gun laws, I'm going to stay out of. Happy with the laws in Australia. The thing I...

    cider - my way

I used vanilla and cinnamon in cider 2 xmas' ago. Cant remember exactly the recipe but I wanted them to shine through. I think I may have used 2 cinnamon sticks and 3 vanilla pods cut in half and de-seeded. Seeds and pods. The one thing I do remember is that mine tastes like ****. Mostly...

    Sierra Nevada Pale Ale

According to SN they don't dry hop their pale ale. But they would have to have really late hop additions to get the aroma???

    Sierra Nevada Pale Ale

Magnum and perle for bitterness (perle would impart flavor too) and hesps of cascade for flavor and aroma

    Sierra Nevada Pale Ale

If a recipe calls for 3kg DME you need more LME for the same recipe. I used DME on this brew as the recipe called for it. Its dead easy using DME over LME. Put this brew into the secondary a few days ago and it tastes awesome for flat warm beer. I'll let you know how it turns out in 2 weeks or so.

Cool. Thanks for clearing that up for me dudes

    Mashing out

Ah righto, so it's all about bringing the temp up while the grains are still in the wort. I mean you could just bring the wort to boil and pull out the grains at the desired temp yeah?? I read somewhere that the only reason we do it is to stop enzymes breaking down any more sugar.

    Mashing out

Hey guys, This is probably a silly question, just trying to get my head around it. New to BIAB, and I understand what mashing out does but.. Why do we do it when we raise the wort to boiling temp anyway for hop additions? Wouldn't bringing the water to boil have the same results as a mash...
