    Craftbrewer/Bacchus Brewing Co article.

Thanks guys.... It's been a tough few years getting the brewery on track & unfortunately I've not had the time or energy to spend on improving the CraftBrewer side of the business. That's all about to change with the new store, a new website (nearly finished), 100's of new products to go on...

    Mangrove Jack Craft Series Yeasts

We've been doing some yeast trials for our house Kolsch, & the M79 seemed a perfect choice from it's descriptors. We brewed 5 identical batches with 5 different yeasts, & all performed as expected except the M79. the beer was clovey & spicy & made a perfect Belgian Blonde. We were concerned that...

    Re-Hydrate v Not..

Goose, you should rehydrate in warmer water, hydrating with cooled water does almost as much damage as sprinkling, otherwise you might as well pitch dry. Small additions of cold wort to your mix will help avoid sudden temp drop, or place in fridge for a short spell. Cheers Ross

    Least Favourite Hop?

Dicko, If you ever get down to Brizzy, pop into our brewery and try the Ahtanum IPA, it's a single hopped English style IPA that's a firm favourite with every one here. Beautiful fruity orange marmalade character. In my humble opinion there isn't a bad hop out there (from reputable sources that...

No chance at this stage Jaypes, but freight to NSW is pretty cheap. We also have a new website in the last stages of being built & when it goes live we'll have lots of great special offers for our AHB customers... Cheers Ross

    Maris Otter as base malt?

Simpsons Maris otter hasn't been available for quite a while. Nothing to do with suppliers "ethics", it's simply not coming into Australia. The Simpsons had nice plump grains, which seemed to get a few homebrewers all excited, but I didn't find it an improvement over TF Maris Otter or Perle...

Temp: Which room would you brew in?

A small fermenting fridge takes up little space & probably less of an eyesore than fermenters on the side. Available off gumtree & the like for next to nothing. Plus for the wife, is you're staying home more & spending far less on beer, Should not be a difficult sell :) Edit - You need a small...

Temp: Which room would you brew in?

Dusty, setting up proper heating control is cheap & easy. Seriously, if you want to make good beer, it's one of, if not the most important factor. cheers Ross

    BRY 97

Was looking forward to the results of this until I saw the pics & noticed there's a big clump of BRY97 sat on top of the wort after 24hrs - If they haven't even bothered mixing it in there's no surprise it's taken so long. Cheers Ross

    where is my leak?

PERFECTLY NORMAL!!! - Guys, STOP talking about leaks - If you know anything about kegging, then the opening post tells you in clear English there is no leak. If you don't understand kegging, please stop confusing the poor bloke. MB-Squared - The keg of beer has simply adsorbed a little more CO2...

    weetbix in IPA

68 gms in 10kg is going to do sweet FA. Just forget it!!! Even if you meant 680gm I wouldn't be concerned in a big IPA, again you wouldn't notice any difference. Cheers Ross

gone to the dark side. cling film for lid.

Spiesy is spot on the money - Thermowell through the lid airlock hole made from a secondhand keg diptube. I remover the big rubber O'ring from the lid as well, which allows an easy path for the CO2 to escape while still keeping out the flies & bugs. Perfect, accurate control, with no leak or...
