    So mad at myself!

    Put down a three can RIS today and I've just realised I stuffed up big time. I forgot to boil the wort after steeping the grain. It was pitched onto trub of another brew + 3 kit yeasts. It is bubbling away already after 6 hours. I guess I just have to wait and taste it.

    Russian Imperial Stout

    I was planning to do the same ish brew. I checked my yeast stock and only have two Nottinghams. If I do a regular stout and pitch on to the slurry would that be enough yeast. Sorry if this is a stupid question but I've only ever used a fresh pack of yeast every brew.

    To be honest I have no idea what the grain is. I will ask next time I'm in the store.

    I have been usin s-23. Kits, 1kg dried malt and steeping 250 grams of lager grain. Fermenting for 3 weeks and then lagering for between 6-10 weeks. Then bottling and storing at room temp. Not sure if I was wasting time by lagering for too long.

    So I started brewing a few lagers (5 so far) but only just starting to drink them. The first I was drinkable but turned out nothing like what I expected. The next batch should almost be carbonated but on testing it tasted a lot better. The other three are a while away before I'll know what...

    Recommend stouts

    I did drink quite a lot of Guinness when overseas and really enjoyed it but whenever I try it here am always really disappointed. Cheers for the advice. Will give me something to do tomorrow night.

    Lager - undercarbed

    Ferment, cold crash, rack to secondary, lager then bottle. Once it's cold crashed I don't raise the temp again until after I bottle it.

    It's been 4 weeks for one brew and eight weeks for the other. The eight week brew is far better than the 4but still a long way from my ales. I might give the lagers away. 1 month in the fermenter, a couple lagering and then another 2 in the bottle. Im not that patient.

    Has anyone used on of these for temp control? Looks like a plug and play. No need for wiring or sparky. Any feedback?

    Thanks Gunn. So my choices are start kegging or would it be possible to pitch a kit ale yeast just before bottling or would this greatly affect the taste. I am pretty happen with the beer.

    Glasses are usually run under hot water tap for a few minutes and placed back into the fridge so I'm pretty sure this is not the problem.
