    You can easily start out with a single infusion mash and see how it goes. While decoctions are the traditional way of making pilsners you can get a similar result by adding some melanoiden to your grist. Start simple and then work from there.

    Are you carbonating by adding sugar? If so surely the yeast will clean up a good chunk of the available O2 anyway. If it's already carbonated it makes sense to keep as much out as possible though, especially for longer storage.

    Glad it worked out for you. It's always a bit tricky learning your system but as you say predictability is more important at this scale. Just remember that it will change for higher gravity brews so don't expect the same efficiency.

    I use a scoop to get from the sack or container into the bucket so have never had an issue with over shooting.

    I have almost exactly the same scales as SBOB above and it is great, when weighing grain I just sit a bucket on the scales and zero it out for each grain, much easier than doing 1-2kg at a time as I was previosuly!
