    What grain is used in LME/DME?

    I tasted a beer that was made with the Chinese malt (given as a sample), it was easily decided my the people involved not to import it.

    Ibu APA/IPA help

    From my experience it should be AOK, you might get 20-30 IBU from the end hops at the most. Often the figures tell lies, the late hop addition will give more aroma and flavour perception than bitterness even though the bitterness is there. It is trial and error and personal taste. Hope this helps.

    Melba Hops

    Could let stand at approx. 80°c for 20 mins or more. Some of the US brewers are letting the hops stand for 10 to 50 mins+ at temps 100-60°c. I have tried it with an AIPA but still in the fermenter.

    No-chill and late hopped starter

    Good idea but that amount of hops (I assume 20 gms or more) in 2 L could adversely affect the yeast by coating it in oils . You could try and see. I would use a separate yeast starter but otherwise the idea sounds good. Worth a try.

    I would expect it be 1.016 with that recipe and a mash temp of 70°c.

    I am happy with a Summer Topaz Galaxy combo that I have used a couple of times. Topaz not to be dry hopped. Galaxy best if not too much used for bittering addition.

    Talked to Col today. Like the last few years they will be a drop off point for national entries, The Brew Shops at Peakhurst and Campbelltown. They will put them on a skip and send them to Canberra. This way the entries will be wrapped, upright and stabilised to some degree. All care taken etc...
