    I have used this yeast many times and usually experience attenuation between low to high 70's. Varies depending on grist make up, mash temp., fermentation temp, etc. Hope this helps.

    I use MO for most ales. Castle pale ale malt is good for APA's and similar beers. I use Vienna in darker lagers but I use Weyermann or Castle, not JW.

    I am fairly predictable. Maris Otter for most ales.Weyermann or Castle malts for lagers, Castle pale malts for American and possibly Aussie pale ales IMHO. Again my experience and view.

    ESB and The Brew Shop supply Whitelabs yeast, see their link at top of page. Like the 1007 it needs cold conditioning to clear and to gain the crisp flavour profile. PS My 1000 post, that came around quickly.

    I am in Sydney with soft water. To a 22L in the fermenter batch I add to the mash 2 g CaSO4 and 2 g CaCl2. To my taste it gives a low mineral crispness. I find too much CaSO4 adds a harshness I don't like but others will have different ideas.
